“Penguin” Brownies

Carly and I enjoy cooking together – Carly especially enjoys anything sweet with chocolate! We had tried a bunch of brownie recipes until we finally tried this recipe from Alice Medrich’s book.  Now, whenever we make brownies, this is now the go-to recipe. (The recipe is called “Steve Ritual Brownies” in the book, but since they go into ice water and Carly is crazy about penguins, she renamed it “Penguin” brownies.)

“Penguin” Brownies (AKA – Steve Ritual Brownies)

From Chewy Gooey Crispy Crunchy Melt-In-Your-Mouth Cookies by Alice Medrich

1 stick unsalted butter
4 ounces unsweetened chocolate
1 ¼ cup sugar
1 teaspoon pure vanilla extract
¼ teaspoon salt
2 large eggs
½ cup unbleached all purpose flour
Prepare an 8 inch square metal pan by lining the bottom and all 4 sides with aluminum foil. Preheat oven to 400 degrees and position a rack in the lower third of the oven.

Put the butter and chocolate into a heatproof bowl.  Put water in a sauce pan so that when the bowl is put on top, the bowl does not touch the water.  Bring the water to a boil and turn off the heat.  Put the bowl over the hot water and allow the chocolate and butter to melt.  Stir until it melts and the mixture is smooth.

Remove the bowl from the over the water and stir in the sugar vanilla and salt. Add one of the eggs and stir until incorporated.  Repeat with the second egg.  Stir in the flour and beat vigorously with a wooden spoon until the batter is smooth and glossy.  Scrape the batter into the prepared pan.

Bake for 20 minutes, or until the brownies just begin to pull away from the sides of the pan. The surface will look dry, but a toothpick inserted in the center will still be very gooey.

While the brownies are baking prepare an ice bath in a roasting pan or large baking pan with cold water and ice cubes so the water is about ¾ inch deep.

When the brownies are ready, remove the pan from the oven and put it immediately in the ice bath.  Don’t splash water onto the brownies.  Let the brownies cool in the ice bath.

Remove the brownies from the pan and cut them into whatever size you want.

  1. I think these will be part of our long Fourth of July Weekend. Thanks for doing the Brownie Recipe Research on behalf of brownie-lovers with less dedication and a soupcon of laziness holding us (okay, ME!) back.

    1. Thanks Nancie. These are awesome – but what do you expect from Alice! Carly has tried a bunch of different recipes and this one is her absolute favorite. When Carly takes these somewhere, none of them come back…. Enjoy your weeked.
