This is a great time of year as the local produce shows back up at the Farmers Markets.  Our June class will be “berry-licious” as the local berries will be at their peak! I also saw the first Alaskan Wild Salmon in the market this week and the Salmon runs are in full force in June.

We will start with a fresh salad of greens with a strawberry vinaigrette dressing.  The entree will feature that Alaskan Salmon I mentioned.  We will saute it and make a Rock Shrimp Dijon Cream Sauce to put on top of it.  You won’t want to miss this awesome combination.

With the berries at full force, we will do not one, but TWO desserts featuring the berries.  We will make a shortcake to feature the berries and add some sweetened whipped cream on top.  If you are looking for a dessert that tastes so great, but is just so easy to make – this next one is for you! We will make Balsamic Glazed Strawberries and serve them over Vanilla Ice Cream (We’ll be using a homemade ice cream of course, but it tastes great with your favorite one from the grocery store as well.
