The school year is quickly coming to an end and as we look forward to summer, the first fresh items are showing up in the farmers market. My all time favorite early crop are strawberries. Three of the four dishes for the evening will include strawberries.

We’ll start with a fresh greens salad topped with a strawberry vinaigrette dressing. For our main dish, we will make a Tuscan Roasted Pork Loin.

For dessert we will make two different strawberry dishes. For the first one, we will make a shortcake and top it with fresh strawberries and cream. For the second dessert, we’ll make a balsamic glaze for the strawberries and serve them over vanilla ice cream. This dish has always been a hit every time I’ve served it. This will be an excellent menu to end the school year and start the summer season.
