With Christmas on a Thursday this year, it has been a bit of a challenge to determine a menu and when we could schedule the annual Escape the Holiday Christmas Dinner Class. So after much thought on the menu, I decided it was time to go big this year! Our main dish this year is going to be the Big Daddy of Christmas Dinners – a Standing Rib Roast or Prime Rib – by whatever name you call it. As for scheduling the class, with all of the activities including the weekend before Christmas, we are going to have the class on a Thursday night. Our start time will be 6:30PM for this class.
I have no CLUE what the weather will be in late December – as I write this before Thanksgiving, we’ve had blizzards up north, a cold spell here and then 60’s predicted for next week. No matter – we’re going to start with a soup that would be great whether the weather is hot or cold! You just can’t go wrong with Crab and Sweet Corn Bisque.
For the main dish – I already gave it away….but we are going to roast a Prime Rib. We will be adding a lot of herbs for flavor. It’s been a lot of years since I’ve done this particular Prime Rib Roast recipe, and I’m not sure why I’ve waited so long since this is just SO GOOD!
We will do a green bean side dish – I’m exploring several different ways to go with this one, but I’m always looking for new ways to cook green beans.
For dessert, another classic dessert that is just so fun to make – Bananas Foster with Homemade Vanilla Bean Ice Cream. Maybe it’s because I like to light up my dishes…..
Anyway – this is a menu you won’t want to miss, so get your reservation in early for this class.
