Once again the farmers markets are filled with all kinds of great things to eat. Join me for this class as we explore a variety of them.

When we were in Provence a number of years back, we drove to the Pont du Gard which is an amazing old Roman aquaduct. Our guide brought along a picnic lunch made by the chef at our Bed and Breakfast in Arles. The lunch was a lesson in simplicity – great ingredients with a little embellishment. An eyeopener was a tomato salad dressed simply with a honey mustard dressing. While our tomatoes are a bit different, we will enjoy a tomato salad inspired by our trip to the south of France.

To go along with the tomato salad, we will make a summer pasta salad of orzo with a dressing and a variety of market produce lightly sautéed.  Besides zucchini, we’ll add whatever else I can find at the farmers market. Peaches are also hitting their peak, so we’ll also make a pork chop with a peach glaze

For dessert we will travel to the other side of the world for a showstopper way to serve the fabulous berries that are in season. On one of our trips to Australia, we had a Pavlova with fruit for dessert. This dessert is supposed to have been created to celebrate the Russian ballerina Anna Pavlova during one of her visits to Australia and New Zealand in the 1920’s. While the origin may still be in dispute between the two countries, you can’t dispute that this meringue based dessert is a great way to end a summer dinner.
