The farmers markets are back in full swing. I went to the Greene Street Market last night and many items are starting to come into season, including peaches and tomatoes. Last year’s peach crop was terrible due to the late frost. I asked the vendor about this year and he told me it would be an excellent crop! I love summer peaches and tomatoes, so we are going to feature them in our June class.

We will start with a “Farmers Market Salad with Balsamic Vinaigrette.” I’ll see what I can find that week, we’ll put it together in a salad and make a nice dressing to go over it. We will then do a summer pasta salad – Pasta Puttanesca, one of the recipes in “Step by Step Italian: Recipes from CC’s Cooking Classes” featuring tomatoes.

We will make another great summer snacker – Watermelon and Peach Salsa. This is a nice fresh fruit salsa that screams summer. For our entree, we will make a lemon pepper fish (I’ll have to see which fish looks great that week.) Don’t worry, its the technique, not the specific type of fish that matters. I’ve done this recipe with tilapia, cod, grouper and others. Nice and easy to get on the table quickly.

For dessert we will cool it off and make a batch of fresh peach ice cream. If you are a peach fan like me, then you will love this dessert!

Tuition for this class is $55 per person. I am trying out a registration system, so for this class, you must purchase a “ticket” to reserve your space.
