January has started as one of the coldest I can remember. While I can’t get away right now, we can enjoy our own Hawaiian Luau right here in the kitchen. Plan on joining me on Saturday January 20th where these tropical dishes await for our culinary trip to the Islands.
The highlight of any luau is the roasted pig. Unfortunately, I can’t roast a whole pig, but we will enjoy two pork dishes to delight our taste buds. The first pork dish is Huli Huli Pork. Huli Huli literally means to flip over and over. We will stovetop grill these marinated pork chops.
The second dish is Tropical Pork Tenderloin. We will marinate and the roast the pork tenderloin. In the warmer months, both of these dishes could easily be cooked outside on the grill.
To accompany the pork dishes we will enjoy Island Rice Pilaf. This rice is made with a variety of tropical ingredients including pineapple, mango, and coconut milk.
For dessert, we will make Pineapple Macadamia Nut Upside Down Cake. There is no better way to cap off our tropical dinner.
