December is upon us and that means it’s time for the 2016 version of the Escape the Holiday Dinner Class. This is always the most difficult menu for me to decide what to serve. This year, Christmas falls on Sunday, so I decided we needed to do dishes that are a bit more regal or royal. If you are looking to host a memorable feast, look no further.
This year, our dinner will feature a Crown Roast of Pork. This is a very impressive dish to present at the table. If you haven’t seen this before, it is a tall roast with the rib bones coming out of the top of the roast forming what looks like a crown. You can’t go wrong serving this to your guests!
I’ve done a number of risotto recipes, but wanted to make one that would match the regal pork roast. So, for this class, we will make Risotto Barolo. This is a risotto that features one of the big red wines of Italy – Barolo. But, instead of a little bit of the wine, we will use the wine for some of the cooking liquid for the rice. This gives the rice a great flavor and a royal purple color that complements the pork. We will round out our sides with a green bean dish.
That leaves just one detail – dessert. I love the pairing of Macadamia Nuts with Chocolate – whether they are just chocolate covered nuts, the chocolate macadamia cake (don’t worry, this recipe will be in the cookbook) or in this case, a Chocolate Macadamia Nut Cheesecake. A very rich dessert to go along with the rest of this menu.
