This is a great time of year as the local produce shows back up at the Farmers Markets.  Our May class will be “berry-licious” as the local berries will be in full bloom! This is also the traditional start of the salmon runs in the Northwest US and Alaska.

We will start with a fresh salad of greens with a strawberry vinaigrette dressing.  The entree will feature that Alaskan Salmon I mentioned.  We will saute it and make a Rock Shrimp Dijon Cream Sauce to put on top of it.  You won’t want to miss this awesome combination.

With the berries at full force, we will do not one, but TWO desserts featuring the berries.  We will make a shortcake to feature the berries and add some sweetened whipped cream on top.  The second dessert is Zabaglione with fresh fruit. Zabaglione is a traditional Italian custard with a splash of Marsala spooned over the top of fruit. The custard lets the fruit shine through.
